Dr. Jessie Morrill joined the Department of Animal Science as an Assistant Professor of Meat Biochemistry in 2022. She served as the faculty coordinator for the University of Nebraska-Lincoln Meat Judging Team in 2023 and is a member of the American Meat Science Association (AMSA) and American Society of Animal Science (ASAS).

ASCI 819: Meat Investigations
Summary: Conduct independent research and study meat industry problems in processing, production, storage, and preparation of meat and meat products.
ASCI 896: Data Analysis and Visualization in Animal Research
Summary: Introduction to experimental design, data analysis, and data visualization techniques with a focus on practical applications in animal research.
ASCI 917: Advanced Meat Science
Summary: Molecular events occurring during the conversion of muscle to meat. Molecular and cellular properties of meat responsible for the functional and palatability properties of meat products.
Research
The mission of my research is to be at the forefront of scientific discovery for the betterment of both animal and human health. With a specialized focus on beef cattle production and quality and nutritional value of meat, we are dedicated to conducting groundbreaking research that not only enhances the sustainability of beef production, but also contributes to combatting obesity and promoting healthier lifestyles in humans. Through our discoveries, we aim to positively impact the agricultural industry, improve human nutrition, and foster a healthier future for both animals and humans alike.
