Cal Schultz joined the Department of Animal Science in December of 2024 and serves as a lecturer and the livestock judging coach. Prior to Nebraska, he served as the assistant livestock judging coach at Butler Community College in 2024. Schultz was a member of both the livestock and meat judging teams at Oklahoma State University, helping lead the livestock judging team to a national championship in 2022 and the meat judging team to a third place finish in 2023. As a member of the livestock judging team at Butler Community COllege, he was an academic all-america selection and helped lead the team to the 2021 junior college livestock judging co-team of the year award.

Teaching

ASCI 300B: Principles of Livestock Evaluation and Judging
Summary: Principles of livestock judging and presentation of oral reasons. Evaluation of body structure and composition differences in breeding and market livestock as related to their use in meat production. Live animal, performance records, genetic evaluations, and breeding livestock scenarios evaluated. Presentation of oral reasons to defend selection decisions.

ASCI 400B: Advanced Livestock Evaluation and Judging
Summary: Livestock judging and evaluation applying principles learned in ASCI 300B. Field trips to commercial and purebred livestock operations and exhibitions. Network with producers to learn varied livestock production philosophies. Develop a proficiency in brief, concise oral presentation of reasons for making a decision.

ASCI 300D: Principles of Meat Animal Evaluation (co-taught)
Summary: Further expertise in breeding animal, market animal, and carcass evaluation. Live animal and carcass grading and pricing.

ASCI 100L: Fundamentals of Animal Biology and Industry Lab (co-taught)
Summary: Introductory animal science laboratory designed to introduce basic principles of animal biology and management.

Extension

My extension focus is to provide strong state-wide leadership focused on comprehensive educational programs of excellence in youth related animal science, including incorporating scientific principles into livestock project selection and animal management. Additionally, I will plan, coordinate, and implement engaging youth livestock evaluation events, educational camps and clinics, and educational materials. The goal behind this being to enhance the department’s outreach and extension mission by expanding youth engagement and providing leadership through recruitment opportunities within the department. Also, I will lead and contribute value to high performing Extension programing teams and collaborate with interdisciplinary teams of Extension specialists/educators, research scientists and others to evaluate and deliver effective, integrated livestock evaluation programs.
