Cooperative Extension has been involved in helping communities, industries and world move forward for more than 100 years. Through the translation of knowledge and discovery to practical application and production, Extension promises of ‘better days, through better ways.’ Consistent with the long tradition of Extension, University of Nebraska-Lincoln Meat Extension has established a robust and collaborative meat extension program focused on providing solutions to the challenges facing today’s industry but also with an “eye” on the future. By utilizing a needs-based approach to programming, coupled with equity across a diverse and inclusive set of stakeholders, Nebraska delivers programming, resources, and expertise to grow and sustain the Nebraska meat industry and produce future leaders through meat focused youth programming.
An Alternate Approach to Ham
Currently, pork is the 3rd most consumed protein in the US with nearly 51 lbs. consumed per capita per year. The industry has done a great job of marketing the shoulder, loin, ribs, and belly; still the ham has always struggled to make the center of the plate unless further processed.
